Produced by Shizu Hamono Seisakusho which is located in Seki City, Gifu prefecture in Japan. The triple-layered blade has an exterior of soft stainless cladding the core of molybdenum vanadium steel, MV steel is quite tough despite having reasonable making it a great choice for cooks with a heavy hand. The hammered surface and stepped grind improve cutting performance and greatly reduces friction so that foods easily release whilst cutting. The handle is made from laminated, reinforced pakka wood that is highly resistant to water.
