Moritaka Hamono has been producing swords for over 700 years since 1293 in Yatsushiro City, Kumamoto Prefecture. Tsunehiro Moritaka is the 26th generation of swordsmiths. Ever since the end of Edo period, Moritaka Hamono has branched out to utilize the same techniques that they used to make excellent swords in knife making. Moritaka Hamono are very particular about using their own style of forging that doesn’t use composite materials. Steel is interleaved into 3/4 of the blade, meaning that you can continue to use their knives until they become thin. They have used stainless steel in the knife tang, which prevents rotting, and makes the knife more hygienic. This Japanese traditional style boning knife is created by surrounding a High carbon steel blade with soft iron, giving the knife sharpness as well as practicality.
Aogami / Blue Steel
In Japan, it is well-known that High carbon steel, while not being rust- resistant, yields the sharpest blade possible. To keep knives of this material in pristine condition requires high levels of maintenance.
