KICHIJI WA-GYUTO / CHEF'S KNIFE 240MM OCTAGONAL HANDLE

The Kichiji WA series is produced for Kataba by a small workshop based in Sakai City; the craftsmen have focused on producing a tough and easy to sharpen collection to meet the demands of cooks looking for workhorse knives. Molybdenum vanadium steel was chosen for its ability to take a razor-sharp edge and hold it without being overly brittle, it's also fully stainless making it easy to care for. The blade is ground asymmetrically and has a 90/10 edge out of the box, we recommend sharpening this series before use as the factory edge is basic. The Octagonal handle is made from Magnolia wood with a buffalo horn ferrule.

To sharpen these knives, a ratio of 9:1 should be employed, with the right-hand side receiving 90% of the sharpening and the left only 10%.
