A great western handled series for users looking for carbon steel with stainless cladding, the balance of this knife is much like that of a European blade making it a great transition for cooks new to Japanese knives. The Aogami steel holds an edge very well but is also very pleasant to resharpen so this knife is well suited to professional use especially as its stainless clad, the rugged Nashiji finish and ergonomic Pakkawood handle looks great and feels good in the hand.

taken when using this knife.
