Thin, light, nimble and fully stainless; this Gyuto is best to use for general purpose such as vegetable cutting, carving meats and fish in commercial kitchen. cleanly finished and robust. Aus-8 is one of our preferred stainless steels as it’s not too brittle and easy to sharpen. The handle on this knife is deliberately oversized for better grip and control.
