Kensho whetstones are a collaboration between master sharpener Masashi Fujiwara and an expert natural whetstone supplier, each line has been designed to have very specific characteristics for sharpening different steel types or cutlery/tool types. The Zan line are best suited to sharpening carbon steel cutlery and bringing out the contrast in laminated knives and tools. These stones should be used with a small amount of water and shouldn't be soaked for more than five minutes.
