Forged in Sanjo, Nigata prefecture by Mutsumi Hinoura. The Hinoura family are renowned for their craftmanship and Mutsumi Hinoura certainly doesn’t disappoint with this attractive Gyuto. Made from shirogami 2 clad in soft iron with a stepped grind, this classic construction is ideal for the sharpening enthusiast as it facilitates easy thinning. The deep tsuchime finish is a nice design features adding personality to this series. The blade is thin behind the edge with a nice kasumi finish with really bright hagane. An excellent cutter with a good standard of fit and finish.
