Santoku is a multi-purpose knife. Since their founding 1870, Fujiwara Hamono has been making Japanese blades as sowardsmiths for 135years. This is Teruyasu Fujiwara's signature collection easily recognisable due to the recurve on the choil, this small design detail helps to ensure the knife fits comfortably in the hand and gives the blade the feeling of a precision instrument. The forged tsuchime (hammer beaten) finish assists with food release whilst the stainless cladding makes the knife easier to maintain.
