KOTETSU R2 GYUTO / CHEF'S KNIFE 210mm

The Kotetsu series by Takayuki Shibata is renowned for it’s laser grind, this series is extremely thin behind the edge and

moves through ingredients effortlessly.

The fully stainless san-mai series has a core of R2 powdered steels which has excellent edge retention due to it’s alloying.

The handle of this knife is made from Rose Wood, it is a traditional Japanese style.

Rose wood is water-resistant and therefore perfect for keeping high standards 

of hygiene within your kitchen.

The shape of these knives was inspired by the design of a famous Japanese battleship and the name Kotetsu refers to the extremely hard

“Hagane” (hard steel) used in this series.

Takayuki Shibata is a master sharpener based in Fukuyama city  Hiroshima prefecture.

He hand sharpens all the Kotetsu series with his own unique method, this gives them both a polished but toothy edge making these knives truly

breath taking to cut with.
